Stracciatella is the decadent filling that hides at the heart of our burrata. Long strips of stretched curd are torn by hand into stringy strands and bathed in luscious cream with a dash of salt, creating a rich, velvety mixture that melts in your mouth.

Vito Minoia became an apprentice cheesemaker at the age of 16 in Puglia, Italy. He has been producing traditional handcrafted cheese for over 50 years.
